CAULIFLOWER “RICE” WITH PEAS

Ingredients:

1 large head of organic cauliflower

½ cup frozen green peas

1 TBSP pastured butter

¼ cup water or broth

Directions:

  1. Cut the cauliflower up into florets.
  2. Put the florets in a food processor (a few at a time for best results) and process until it looks like rice.
  3. Transfer to a pot and add the rest of the ingredients.
  4. Cook until heated through and water has been absorbed.
  5. Serve with any food you would normally use rice.

Particularly good with Indian and Asian dishes!
